Cocktails using champagne or sparkling wine as a base are as old as the beverage itself. Some people tend to mistype champagne as champange with the N first. The Champagne Cocktail was chosen by Esquire magazine as one of the top 10 cocktails of 1934 although its popularity has waned, it still has unflagging adherents. The classic recipe for a Black Velvet is to half fill the glass with the stout and tilt to the side, whilst pouring the champagne in gently, trying to create as little foaming as possible. To some purists, the mixing of champagne with anything might seem unthinkable. Please do not take the cage off the top of a champagne bottle and wave it around the room. Into a large champagne cocktail glass put a sugar cube, a half pony good cognac, fill with very cold dry champagne and top of with a dash or two yellow Chartreuse.
